Researchers at Edith Cowan University have discovered a significant link between higher dietary intake of vitamin K1, found in leafy green vegetables like spinach and kale, and a reduced risk of Chronic obstructive pulmonary disease (COPD). The study, published in The American Journal of Clinical Nutrition, tracked over 179,000 adults for more than a decade, revealing that those with the highest vitamin K1 intake had a 16% lower risk of COPD and better lung function. Associate Professor Marc Sim suggests vitamin K activates a protein that protects the lungs' elastic fibers. While vitamin K2 showed no similar benefit for COPD risk, the researchers emphasize that a healthy diet, including leafy greens, can support lung health, though it does not negate the harm of smoking.
